HAPPY FOODIE FRIDAY!


As school has been intensifying, I've found myself simplifying meals. So, for today's ~Foodie Friday~ I'm going to share some of my "go-to" healthy, easy, affordable meals for college students that have been staples during my time abroad.


BREAKFAST


1. Oatmeal - Oats are cheap, filling, quick and easy. Cut up some apples and sprinkle cinnamon on top - voilà! It's the perfect breakfast. And, if you're really feeling fancy, Netto sells chia seeds you can add to ensure that you stay full until lunch. I also love to add raisins and nuts if I have them on hand.

2. Smoothies - A couple weeks ago I discovered the magic of our hand blender. I didn't think it would actually work but it blends everything together perfectly! All I do is put one banana, a handful of frozen berries, oats and almond milk in a mason jar and blend it up! It's definitely a game changer.


3. Pancakes - You only need 2 eggs and 1 banana to make these healthy pancakes. Mash the banana, mix in the eggs and cook about 1/3 cup of batter on the stove like normal pancakes! Sometimes I also add in oats as well and sprinkle berries and maple syrup or honey on top.

LUNCH


1. Hard-boiled eggs - Each week I hard-boil some of my eggs. It's such a quick and easy thing to pack for lunch. I usually eat one or two eggs with veggies and hummus, deli meat, or a salad as well.


2. Smoked salmon - I'll pick up a pack of smoked salmon from Netto and some crackers and it makes for a perfect lunch! I usually pair it with veggies and hummus or an apple and peanut butter.


3. Leftovers - Pro tip: make two servings of dinner the night before and pack up the second for the next day's lunch. It saves so much time and energy! We've all been doing this in my apartment.


DINNER

1. Tacos - These make for a great group dinner. Get some taco shells, ground meat, cheese, avocado, salsa and whatever other toppings you like and have a taco night with your roomies. It's really quick too, making for a good last-minute meal.


2. Salmon - I have salmon and veggies at least twice a week. It's my ultimate go-to dinner because of how simple and healthy it is. I preheat the oven to around 200 degrees celsius then season my salmon with olive oil, herbs and garlic salt, wrap it in tinfoil, and put it in the oven for about 20 minutes or until it looks done. While it's baking, I grill the veggies on the stove.


3. Pasta - Everyone knows pasta is a quick and easy dinner. But I've been mixing mine with pesto, shrimp and broccoli to make it extra filling and delicious. You can buy pesto and pre-cooked shrimp at Netto so it's super simple!
